Harvest (September / October)

The dates of the beginning of the harvest, which are determined by the Champagne interprofessional grouping, vary according to the crus, in the interest of optimal quality. The goal is to harvest fully matured and healthy grapes (before any attack of rottenness). The quality of the wines depends on the good balance between the richness in sugar and level of natural acidity. Tests are regularly done within the previous weeks to closely follow the evolution of these factors.

Harvesting machines are forbidden in Champagne. Grapes are exclusively harvested by hand and brought to the press as fast as possible to prevent oxidation.
